Question: How do you make oatmeal thicker?
How do you make oatmeal thicker so that it is basically a porridge? I'm talking about the "old fashion" oatmeal that comes in those taller cylinder-shaped containers.

The longer you cook the oatmeal the thicker (and creamier) it will become.

I find the nicest oatmeal comes when I use the following recipe:
1/3 cup oats
1/3 cup water
2/3 cup milk
small pinch of salt
1/3 teaspoon cinnamon
2 tablespoons raisins

Mix all together in a small saucepan and place on medium heat. Cook, stirring very, very often if not constantly until the mixture comes to the boil then lower the heat to a very slow simmer and continue stirring and cooking until you reach the desired texture. Recipe makes enough for one person - multiply accordingly.

Remember - you can use any liquid you like essentially when you are making porridge/oatmeal, but the ratio should be 1 measure of oats to 3 of liquid. Also the finished product will thicken as it cools. And finally - remember to fill your saucepan with water as soon as you are finished with it to make it easy to clean.



If you are using old fashioned oats (not instant), use less water. A tab. of ground flax seed will add nutrients and change the consistency slightly, too.

We buy our bulk oatmeal by the pound at a local health food store (Rainbow) and find the quality better for the price. (The store we go to has two grades and even the lower grade is better than the packaged variety). Steel cut oats is expensive, but it's very good. The best price we found was at Trader Joe's market. The oatmeal we bought from Costco in a cardboard cylinder contained a lot of broken oatmeal flakes.
