somehow I knew you would be asking this. My fave would be beets.

Onions, leeks, potatoes, carrots, beetroot, radishes, lettuce, spinach, cabbage, tomatoes, cucumber, broad beans, peas and mushrooms

my first would be potatoes so many ways to eat them I love sauté onions,carrots are fine with a lot of butter and so are peas,beans and spinach in spinach dip. Of course cabbage is a all time favorite.
