That's not all bad not eating carbs. Simple carbs are quickly digested into blood glucose and if it's not used, it's converted to fat. Complex carbs are slowly digested and don't convert as fast so they tend not to raise your glucose levels. Rice is not only a simple carb, it's high glycemic and probably worse for you. Pasta is another simple carb.
If you must eat potatoes, try the small redskins. They provide more complex carbs. Plain white bread is the worse carb. Really spikes blood sugars. If you want to eat breads, choose the whole grain types (not the usual brown 'wheat' which is white bread colored with molasses). So, it's really not a problem..you're eating healthy.

potatoes - mashed potatoes, cooked/boiled, fried, you can make you can make your own wedges, you can make like a gratang... thats ncie!! or like potatoe waffles. or omelets with potatoe!!

bread - you dont like cheese toasties? or make your own pitta pizzas. or bagels, tacos? french baguette? garlic bread?soda bread? pitta bread?

pasta - tagletelle, spaghetti bolognaise, gnocci, the pasta with the filling in them, mac and cheese, spaghetti hoops etc etc... theres lots of nice sauces aswel.. chicken, mushroom, vegetable, tomatoe, etc etc

noodles - yummi yummi.... especially the chicken flavoured one!

rice - egg fried rice, vegetable wok/chicken wok/prawn wok with rice. prawns with rice. minced meat with rice!
or you can try like bulgar or couscous!

theree are some options... but you know... eveyrthing has carbs... its jsut that potatoes/pasta/bread has alot more carbs.

Vegetables, fruits, and tubers such as potatoes are the most nutrient dense sources of carbohydrates. If you don't like white potatoes try sweet potatoes, they're delicious.

also good are oats (i think), in porridge and stuff. have you tried cereals?

Pasta and rice are healthier than say bread or potatoes. Depends what you mean by good.
