All of the sudden, I'm wondering if rice in only used for cooking after it is dried?!


Question: All of the sudden, I'm wondering if rice in only used for cooking after it is dried?
Surely it doesn't grow hard and dry?! What is it like when it's harvested and why can't you buy it 'fresh' if you live near where it grows?
