I used to hate beets until I found a recipe that combined them with apples & cinammon. I love them that way.

My recipe is below

I had only *canned* beets when little and truly hated those...still do--bleh!!!

I've discovered though that, like most veggies that have been canned, fresh beets are entirely different and I actually like them cooked in various ways and in various recipes. When they're sauted or roasted, they're kind of sweet (carmelized) and have very little of the taste and texture I associated with the canned ones.

My favorite way to fix beets is to cut them up small, then saute in butter (or olive oil or both). That takes about ten minutes so sometimes I'll even grate them instead. Once they're softened enough to stick a fork in, I'll add the (washed) green leaves that I've chopped up a bit and saute those with the rest of the beets till wilted. Sometimes I'll add a little butter/margarine on top when serving. That's really good (not to mention unbelievably healthy).

I'd eat beets even more often if I didn't have to deal with the "bleeding" of the color (it'll stain). I try to chop them up with newspaper or foil or something underneath the cutting board (I'll usually use a plastic board for beets), so I can keep them from getting on the counter, then pop them into the skillet.

Roasting them whole avoids most of that problem, but I do like them with their greens and in smaller pieces.

I admire yonosay's dad. I eat them hot, cold with vinegar and pickled, the baby ones in sweet vinegar are the best.

I love beets weather baked boiled or pickled.

I think if they are cooked properly they have a sweet earthy flavor that is pretty good.

You think that's bad, my dad likes them pickled.

I love beats!

A little on the side to enhance food is good. I wouldn't want a plateful.
