Wet your fryer then cover it with DRY dishwasher powder. Leave for an hour or so.
...This penetrates the surface of the hardened oil making it SLIGHTLY easier to remove.

.... Using household bleach is also quite good

...For really hard coating, I should sprinkle some toilet cleaner powder on it
.... You can also put some in the pan with water, then boiling for ten minutes

.....Remember there is is no quick remedy for this -- It has to penetrate deeply to work and will take time.
....All those things have an ALKALINE base.

WARNING --- Don't use any of the above in an enclosed space -- They can / will damage your lungs

just a good degreaser and some steam that is all Professional restaurant cleaners use but the degreaser has dangerous vapors so clean out side and hot water activates the degreaser.
be careful

cleaned a butt load of them

It's stuck on there becuase it wasn't properly cleaned in the first place.

You can buy fryer cleaner, you may ask ata resturant if you can buy a pqck or look at a resturnat supply store.
