Question: How long do grapefruit rinds last in the fridge?

I want to make grapefruit rind candy instead of throwing the rinds away. I have been storing all the rinds in the fridge, but it's taken be about 2+ weeks to eat enough to make candy. Are they still good?
How long do they last in the fridge? Should I freeze them in the future...?
