Disadvantage: It'll taste disgusting
advantage: it adds flavor, and tenderizes tough food
disadvantage: fatty foods will add the fat to the stew, and usually fairly salty
It softens it and makes it more palatable. Stewed fruit tastesbetter when cooked.
