I'm still in school and need to start eating breakfast more often. Know any healthy vegan breakfast meals?

These go well with a tangy fruit salsa or mango ice crean.

Ingredients:

1 tablespoon Cinnamon
2 tablespoons Splenda
4 8" low-carb tortillas - I used Mission brand
1/2 teaspoon Olive oil - non-stick spray

Preparation:
Mix cinnamon and Splenda in a shaker. NOTE: Don't substitute the "Blue" or "Pink" stuff. Their sweetners can't stand up to the heat this recipe uses.

Pre-heat oven to 350F

Lightly spray each tortilla with oil then dust it with the cinnamon mixture. Place them in a stack when they are all dusted. Cut the stack into 8 wedges and place them on a baking sheet. Sprinkle any remaining cinnamon mix over the wedges to get an even coating on all.

Bake for 8-10 minutes until crispy and lightly browned. Remove and allow to cool.

Each (4 wedge) serving contains an estimated:

Chol: 0mg, Na: 150mg, K: 4mg

Healthy vegan meal is an oxymoron. There are many possibilities for breakfast if you are sensible. Being a vegan is not sensible at all. Humans are ommnivores. I had sliced ham, two eggs, oatmeal with milk and orange juice for my breakfast today. Try it, and you will like it.



Try Nutri-Grain cereal bars- They're AMAZING!!!!!!!!!!!!!!

Oatmeal is good too. Try a flavor like cinnamon.

Also, Amy's Organics makes vegan breakfast burritos. They're great!!! They only take about 3 mins in the microwave.

Being a vegan is tough....trust me, I know.
