Help with brownies/eggs?!


Question: Help with brownies/eggs?
I have to bake brownies for tomorrow, because it's my mates birthday, and I got everything I need, but I realised my eggs have expired (20 Nov) so 2 months ago... I can't make it to the shops cause its past midnight, and I wont be able to get any tomorrow in time to bake them and all... Can I use the expired eggs? They smell slightly odd (not cracked them though) but eggs usually do. Help?

You can test the eggs with the water test. Get a bowl of water (unsalted) and put the eggs (in their shell) in the water. Fresh eggs will lie on the bottom and not float. Eggs that tilt so that the large end is up are older but ok, and eggs that float are rotten.
So
If the egg stay at the bottom - it is fresh.
If the egg is at an angle on the bottom - it is still fresh and good to eat.
If the egg stands on its pointed end at the bottom - it is still safe to eat but best used for baking and making hard-cooked eggs.
If the egg float - they're stale and best discarded.



Be sure test them before, put the raw eggs in a pan of water. If they float - throw them away. If they float half way - throw them away. Otherwise, anything else - lying flat, standing on one end or standing at an angle are fine.
