Turkey because it's possibly the least medicated bird. Most chicken you buy in the store is injected with salt water and other chemicals to make it weight more and keep it looking fresh. I'm talking about whole chicken and parts not processed meat.
Duck, definitely. I'm from the UK, and I chose duck because you can do so much with it. I find chicken quite bland on its own, duck is much richer.
