Question: Do I really need to dust the meat in flour before browning?
I am making swiss steaks and all the recipes call for dredging the meat with flour prior to browning. My son has to eat gluten free due to stomach issues and did not want to use his special gluten free flour because I don't love the taste. Do I have use the flour or can I brown the meat without the flour?

Salt (kosher) and pepper the steaks very well. Heat your skillet over medium-high heat for 2 minutes. Add 2 teaspoons of oil or butter and heat for 1 minute. Add the steaks. When they are ready to be turned, they will release themselves from the pan, turn and sear the other side and repeat. Proceed with your recipe as directed.

if you don't want to use wheat flour, you could use rice flour, corn starch or even potato starch
its used not only to create a small crust, but also the browned bits will thicken in the pan into a gravy for the steaks.
