English muffin use both yeast and baking powder in the batter, and are first griddled to brown them and baked to finish them off, the amount of yeast to baking powder is 4 to 1, so they do not taste like soda bread.



we don't,muffins have no holes in them you probably mean crumpets.I do not know how they make the holes but they are there to absorb the butter and jam.. Never use the singular when talking about crumpets to a Brit,it has a different meaning.look up cockney slang on line.



The holes are created as a result of the proper ratio of ingredients and the correct temperature and time they are cooked. A chemical reaction occurs as the dough ferments which creates the holes, or space between the resulting muffin



They are from air bubbles in the mixture.
