Typically, the sausage is formed in a casing traditionally made from intestine, thus giving it that round plump intestine-y shape. Kind of gross right? The casing is sometimes synthetic also...

Wikipedia.com

Because it is the shape of the intestine the minced up animal parts are forced into.

Natural sausage casings are made from the submucosa, a layer of the intestine that consists mainly of collagen. The fat and the inner mucosa lining are removed.

the only other shape that i know is the hagggis it is like a short fat sausage and traditionally is a sheep bladder

I used to like the shape but you've turned me right off sausages. The casings are mostly synthetic nowadays.

haggis is cooked in a stomach not a bladder
