Dr. Kellogg! He was an American medical doctor in Battle Creek, Michigan, who ran a sanitarium using holistic methods, with a particular focus on nutrition, enemas and exercise. Kellogg was an advocate of vegetarianism and is best known for the invention of the corn flakes breakfast cereal with his brother, Will Keith Kellogg. He led in the establishment of the American Medical Missionary College. The College, founded in 1895, operated until 1910 when it merged with Illinois State University.

Charles William Post first marketed Postum in 1865. So I imagine he was the first to taste his own invention.

If you had asked for the first person to "eat a cereal for breakfast", then yes, you could say it was some caveman that added some animals milk to his grain in the morning. But since you used the term "breakfast cereal", then C.W. Post, in 1865, is the right answer.

people ate grits or corn meal mush for breakfast many many years ago and that is cereal, it just happens to be hot cereal
. And long before Kellogs or Post were even born.
There is no way to know who the first person was to eat a grain for the first meal of the day.

Don't think you can determine who was the first person to eat cereal because during the invention process a lot of people taste tested it. Here is a link for the history though:
