Do you use canned salmon? If so, do you discard or keep the skin?( the black part)?!

salmon skin is EXTRELY high in omega 3 fatty acids, so its very good for you
if you like it or don't mind it... eat it.
It's a matter of personal preference. If it wasn't edible it wouldn't be in the can. I usually throw it away, but I've been known to be just lazy enough to eat it.
Its your choice entirely - I always eat the bones separately because I like them and I feed the skin to my cats.
It's all edible. I usually keep the skin.
