As a chef it depend on where it was harvested, truffles are found all over Europe, most come from France and Italy, but I have used others, even ones fro the US state of Oregon, I had some chinese ones to.
You have 2 types white and black, some are harvested in the summer other the winter, but it is really the fall, back truffles can be fresh, frozen, canned or brined, white are almost always sold fresh or frozen, both can be bought in paste form, plus they flavour oil with both, black one can be used in both hot and cold foods, white loose alot of there subtle flavour if heated, you shave them over dishes that are cooked to aromatize them.
