We would probably taste on the salty side, since humans tend to be salty animals. This is why its dangerous for us to step in water with an electronic device in it like a blow dryer (because of our high sodium content). But I digress.

we are very muscular so it would be tough and chewy, or it would be a lot of fat. not good eats.

Not that I would want to find out, but I bet we would be comparable to pigs because we eat every thing like pigs do.
