Why does meat go black on my BBQ plates?!

You actually may not be searing the meat at a high enough temperature. Depending on the meat, which should always be grilled when it is at room temp, not straight from the ice box, you need to get the grill grates nice and hot. You sear the outside, and then you can turn the heat down a bit to cook it through to your desired temp.
The guys at these local BBQ Cook Competitions coming up are able to do this very well! You've seen them on TV - Food Channel, etc.

try lining your rack with aluminum foil. or maybe your rack in the barbecue grill is too close to the charcoals
