My old local butchers sold dairy products, cakes & biscuits on the side, not just meat (Man their cakes were SOOO GOOD! Mmmm carrot cake....). They also sold a lot of unusual old fashioned cuts of meat or animal products which helped cut down on waste (before i went there i never knew what chitterling was!). They were for the most part a very old fashioned butchers, had very friendly people who worked there who always had a smile and always remembered your name ^_^v .
Normally they would put it in the bank
Avoid vat at 20%.
only sell meat.
