What to do with lentils?!


Question: What to do with lentils?
I have a bag of dry brown lentils that I would like to use as a side for baked salmon. I was thinking boiling them in chicken broth and water with green pepper, onion, and spices. I've never cooked them before and I want my husband to like them. Any ideas will help.

Here's what I would do...

in a large pot, saute 1 chopped onion, 1 cup sliced carrots, 2 stalks celery chopped, 2 cloves garlic chopped, and 1 bay leaf. Once the veggies start to soften, add 1 cup of the lentils, 1 tsp ground cumin, stir, salt and pepper and add three cups of chicken stock or broth and one chicken bullion cube. Reduce the heat to medium low and cover. Cook for about an hour (maybe more if you want your lentils softer) and then serve in a bowl with a dollup of sour cream.

Very good, and very healthy.
