Question: Do I need to refrigerate my strawberries?
I bought a flat of strawberries today from a local vendor. They were picked yesterday. I haven't washed them yet (I wash as I eat them), and I plan on cutting, distributing, freezing tomorrow afternoon (two days old). The vendor told me they will be good for about a week.

Do I need to keep them refrigerated until tomorrow afternoon or are they okay out for a few days?

What's the best way to store strawberries?
For strawberries to stay fresh do not wash them right away. Store them in a large container with a dry paper towel at the bottom. Separate the berries by layering them with paper towels to maximize freshness. Just before using, wash strawberries with the caps attached under a gentle spray of cool water. For best flavor, allow strawberries to reach room temperature before serving.



>It would be wise to wash them right away because mold spores grow rapidly on strawberries. Strawberries are extremely sensitive to mold...so in order to get rid of the spores, you should wash them right away in cold water and then let them drain in a caulander and finally, dry them with a clean towel so you get the surface moisture off of them. If you refrigerate them, you will keep them from ripening and developing natural sugars. I guess the fact they may be under-ripe will not matter if you first preserve them in sugar before canning or freezing them.



If they fit , put them in the fridge. Otherwise put them in a cool garage till tomorrow.
