Try some Indian recipes. They have lots of vegetarian dishes.
Try this one, I use it as a veggie for a roast beef or a turkey, but you can eat it on it's own, it's sooooo good.
It's called vegetable casserole, here's the recipe.......
Par boil broccoli, carrots and cauliflour, get a deep casserole dish and put all your par boiled veggies in the bottom of it. Then get two medium or one large onion and cut it into rings, just throw those on top of the veggies. Next, open up a can of cream of mushroom soup and add 1/2 cup of mayo to that, mix it all up and add a cup of shredded cheese to that, mix in all the cheese and pour the mixture on top of all your veggies. Then get a bag of croutons and crush them up as small as you can, (don't use bread crumbs, they are too fine) Melt about 1/3 cup of butter and mix butter and croutons together in a bowl, then add about 1/2 cup of shredded cheddar cheese. Spread this mixture on the top of your casserol, cover and bake in the oven on 350 for 45 minutes to an hour. You can also make this the night before and just put it in the fridge and bake it when you're ready to eat. This is an excellent casserole, everyone I know loves it and it goes good with meat or just on it's own. Hope you enjoy it!

One of my favorites:
Yams, carrot boiled and drained. Add a large peeled sliced apple,
Splenda brown sugar and butter.
Place in baking dish and bake in over for about 25 min or in the microwave till the apple is soft.
Delicious.
