its not a problem-i am veggie ,and can have most of whats on offer.just make sure that ur roast tatties and yorkshire puds are cooked using veg oils.i have everything except the meat usually as roast dinner do consist of a lot of vegetables anyway.also make sure ur meats and meat cutting implement have been nowhere near theother stuff-i have been to dinners before where its piles on platters next to the meat and obviously i wont eat it.
for the main cousre you could make something veggie,ask your guest what they like,some people are perfectly happy wiv veggie sausages wiv their dinners,other would like some more adventurous.
one simple and quick dish is a bag of quorn pieces(veggie chicken),add cherry tomatoes,chopped courgettes,red onion,peppers,fresh chopped basil and garlic if you want.place in a baking tin,add good dash of olive oil and pop in the oven.simple but tasty!
oh dont forget the deserts and wines have to be veggie too,if you buy a packet desert it will often state whether its veggie,otherwise look out for gelatine in a lot of deserts ,lots of tradional xmas puddings are made using beef suet so thats something to look out for too.
if you are in the uk ,the co-op label their wine ,so you can see if its veggie or not.

Tofurkey, mashed potato's, candied yams (veggie mallows), green beans with veggi baco-bits, corn......

That is easy, you can make all of the traditional side dishes, mashed potatoes, sweet potato casserole, acorn squash, corn, peas, broccoli, rolls, cranberry relish, and then make gravy from canned vegetable broth and cornstarch.

How about a Veggie Lasagna? It's festive and easy to prepare.

sprouts carrot/ turnip,mash and roast potato's and gravy,veg gravy by the way> who needs meat , i hate turkey anyway, something i got to chew through till i get to the roasties

If you are using the oven and have alot going on, just make a cold veggie tray with ranch or spinach dip/dressings.
Otherwise, baby carrots sauted in butter and honey with frozen peas tossed in at the last minute.
Acorn squash cut into rings, baked and filled with a stuffing mixture or again, cooked peas. (This is sooo pretty)
Stir fry assortment of veggies. Onions, celery, mush, cauliflower and broccoli.

Last year I had to cater for a vegetarian and I cooked roasted veg in a separate roasting tin : red, yellow and green peppers with courgette and tomatoes and olives in olive oil and some linda mac sausages tossed in for good measure...it was very tasty and we ate leftovers cold the next day. She had some roasted pasnip and tatties too.... I'd do it again as it was so easy....

im sick of nut roasts and quorn roasts so this year am having potato jackets stuffed with mashed carrot and turnip topped with goats cheese for a starter. tomatoes stuffed with rice and herbs, side portion of baby veg and white wine sauce for my main course, and fresh fruit baked in a brandy sauce for a pud.

Vegetable lasagna, vegetable fried rice, fried plantain, three beans salad, try our foodnetwork they have lots of vegie dishes.

As the main dish you could have mashed potatoes (use plain soy milk when mashing if you prefer a vegan meal), brown rice, veggie “turkey”, and here are a few more recipes.

Stuffed Mushrooms
1/3 C pine nuts
3 cloves garlic, minced
1/3 C fresh cilantro, packed leaves, chopped
1/3 C fresh basil, packed leaves, chopped
1 T lemon juice
1 C tomato, chopped
2 T Braggs or to taste
Put all ingredients into a food processor, except the tomatoes, and pulse chop several times. Stop to scrape down the sides and repeat. Add the tomatoes and continue to pulse chop until just blended. Keep a texture to apesto, it should not be a puree. Remove stems from mushrooms and stuff the filling into the cap of the mushroom. Place on a dehydrator sheet and dehydrate at 105 degrees for 2-4 hours.

Vegetable Kebabs
4 mushrooms
1 zucchini
1/2 cauliflower
1 red bell pepper
2 carrots
1 onion
2 inch piece fresh ginger, peeled
2 cloves garlic
1/2 C Braggs
2 C water
1/2 t cayenne
1 t basil
1 t oregano
Clean and cut first six vegetables into chunks. Blend remaining ingredients and pour over vegetables in bowl. Marinate overnight in refrigerator. Put onto wooden skewers and dehydrate for 24 hours at 105 degrees.

Mock Meat Loaf

1 beet, grated
1-2 sweet potatoes, grated
1-2 white potatoes, grated
1 turnip, grated
1 onion, cut-up
3 celery stalks, with leaves
1 pound raw peanuts
Put each item in a food processor indivdually. When each item is processed, place in a large bowl. Mix together and refrigerate overnight. Next day, shape into a loaf.

You could also serve a salad or a soup, and here are a few more suggestions.

Gazpacho Soup
1/2 Cup cut up of each: corn, red pepper, cucumber
1/4 Cup cut up of each: zucchini, onion
2 Tablespoons parsley
1 Tablespoon cilantro
1/2 clove garlic, chopped
1-2 teaspoon water
Blend red pepper, strain in blender. Add cucumber and corn, blend until smooth. Add remaining ingredients, blend thoroughly, add water or juice for consistency. Place a handful of sunflower sprouts in a large bowl with some corn and diced red pepper, pour the soup over. Garnish with additional corn and parsley.

Cabbage Veggie Salad

Chop and mix together:
Cabbage
radishes
dulse
cumin
tahini
bell peppers
red onion
garlic
sesame seeds


For dessert you could make cookies, cakes, ice cream, or pies.

Quick and Simple Apple Pie

This Apple Pie uses very few ingredients, it is easy to make and tastes wonderful!
Ingredients:
Crust:
1 1/2 cups sunflower seeds
3/4 cup raisins
1 tablespoon carob powder
Filling:
5-6 medium sized apples peeled and cored (I use green apples)
3/4 cup raw, unfiltered honey (preferably with pollen)
1 tablespoon Cinnamon
juice from 1/2 meyer lemon
shredded coconut
dash of cloves (optional)
1 seasonal fruit (kiwi, banana or other)
Directions:
Make the crust by placing the sunflower seeds, raisins and carob powder in a food processor and process with the "S" blade until finely ground and mixture sticks together.
Line a 9" pie pan with this mixture and form the crust.
Take the apples, and pulse chop with the "S" blade into small pieces. (Be sure not to overdo it and make apple sauce!)
In a bowl, mix the chopped apples, cinnamon, lemon juice and honey and dash of cloves together.
Scoop the mixture into the pie crust. Save the "juice" that remains and drizzle over pie when served. Level out with a spatula.
Sprinkle on Coconut flakes on top of the mixture.
Cut seasonal fruit into thin slices and place on top of the coconut flakes in the center of the pie!
For best results, place in refrigerator for 1 hr to allow pie to set.

Fridge cookies

3 cups rolled oats
2 cups almond butter
3/4 cup honey

Mix almond butter and honey together then add oats.
Form into balls and set aside. Pulverize more oats in a food processor until powdery.
(You can add carob powder and cinnamon to the oat powder, but I don't.)
Roll balls in powder.
Refrigerate for a while before eating.


Rainbow Sorbet:
4 frozen peeled kiwi
1 box frozen strawberries (tops cut off)
1 frozen pineapple (peeled, sliced)
6 frozen bananas
4-6 fresh mint leaves
3 fresh bananas
1. Freeze fruit 8-12 hours ahead of time.
2. In food processor with "S" blade: blend 2 frozen bananas, kiwis, mint and 1 fresh banana in food processor. This is the first layer. Put into a parafait glass, place in freezer
3. Second layer: in food processor, blend 2 frozen bananas with frozen strawberries and one fresh banana. This is the second later, put on top of first layer, return glass to freezer.
4. Third Layer: in food processor, blend 2 bananas, frozen pineapple, and one fresh banana and put on top of second layer, garnish with fresh mint and serve immediately.
8-12 hours to freeze fruit; 20 minutes to prepare; 4-6 servings
Notes:
You can just make one layer and eat that. Each layer can be eaten separetely, on it's own. Any fresh fruit can be used- keeping banana as the base.
Sorbet can be prepared with several machines. The vitamix does fine. The champion and the Green Power can do this as well, using the solid 'blank'.


Could It Be Chocolate Pudding?
Ingredients:
12 dates
12 black mission figs
1 quart purified water
1 tsp raw carob powder
Directions:
Blend 12 dates, 12 black mission figs and 1 quart of purified water. (More or less water may be needed depending on the dryness of your fruit.) Start with slightly less.

Add one teaspoon of raw carob powder.

Chill and serve in in pudding glasses.
