How do you cook tofu on the barbeque?
Answers:
slice it and grill it ..use a pan underneath if you are worried about it sliding through the grates..like a cookie sheet pan. or tin foil on medium grill heat.
very carefully
just like re-fried beans
You need to start with firm or very firm tofu. Because tofu is ready to eat, you are not cooking as much as you are adding flavor. I simply grill it like I would anything else, but off to the side because I'm basically just giving it some heat and color and flavor, not cooking it. A fish cage is really helpful when grilling tofu because it can break apart easily on the grill..
I make a marinade for my tofu with olive oil, a little sesame or sesame chili oil, soy or tamari sauce and lots of pressed garlic and fresh ground pepper. I let it marinade for at least two hours. I often slice or cut up tofu right when I get it home from the store, put in in ziplocks in it's marinade and leave it in the fridge for up to a week for whenever I need it.
Back when I had a balcony I could barbeque in I used to make Dengaku for my wife. It was basically tofu cut into chunks then marinated and skewered. The trick is to put the skewer ends on top of pieces of brick. This kept the tofu from resting on the barbeque grill and sticking. The hard part was always flipping the skewers, but if you have a good pair of tongs you can probably make it no problem.
you can't
Choose a firm tofu, cut into cubes, seasoned with salt, pepper or whatever spices you like, place them onto skewers and then grill. If you search keywords "skewers tofu", you'll get a lot of recipies. Good luck!
I just slice firm tofu into burger bun size pieces, marinade in whatever sauce I feel like at the moment, eg chili, soy, bbq, sesame etc, leave at least 10mins until absorbed, the put a little oil on hot flat bbq plate and quickly heat one side then turn and repeat. Great with salad on a bun, or with onions, mushrooms , capsicum and tomatoes cooked at same time and side dish on a plate. making me hungry now!
The trick to getting flavour into your Tofu is to ensure that you have dried out the moisture. Squeeze it in a clean tea towel then do your marinating.
Then do your barbq-ing.
Not a great one for the barbq myself, but a good tasty marinate is:
2 cloves of garlic chopped fine.
4 tbl spoons of soy sauce
1 tbl spoon of sweet chilli - tabasco is good
mix and leave the tofu for 20+ mins. The longer the better.
Here's another reciepe:
Tofu Skewers
350g of Tofu
1 red pepper
1 yellow pepper
2 courgettes
8 button mushrooms
Marinade:
rind of a lemon grated
juice of 1/2 a lemon
1 clove of garlic
1/2 tsp of rosemary
1/2 tsp of thyme
1 tbl spoon of walnut oil - any nut or olive should do.
make the marinade and cut the tofu into desired size squares after drying it as above.
Chop the peppers, courgettes into desired sizes and skewer them with the mushrooms and tofu.
The reciepe says place on hot coals for 6 mins or put under a medium grill.
Hope that helps.
same as meat
it does really all depend on the type of bbq u have, for preperation you just have to remove packaging remove liquid and cut in to thin strips. cook untill golden brown and add sauces . This is a big hit at bbq's especially for vegetarians!!!!!!!!!!
My method:
Chop the tofu and mix it up with some soy sauce, olive oil, paprika and / or any other marinade ingredients you fancy, and leave it in the fridge overnight.
Then, on bbq day, make pockets out of kitchen foil by folding a strip about 6" wide in half and fold / seal /scrunching the outside edges. Spoon in a serving of the marinated tofu (plus some chopped peppers or other veggies if you like!) and seal the top.
These packets can then be sat directly on the grill for about 10mins or however long it takes until they're cooked and hot all the way through. They're easy to turn over, simple to rip open and serve, and there's no problem with the tofu sticking, burning or slipping through the grill.
And it also means if you're sharing the bbq with meat-eating friends your tofu will be "safe", just handle the packages carefully so as not to rip them.
