Eggs by definition are vegetarian, unless they are fertilized eggs. In that case the eggs would start showing blood spots, since they are actually starting to develop into chicks.

Vegan eggs do not exist. But if you need to replace eggs for a recipe, then you can use Ener-G (look it up on vegessentials.com)
