Almost every vegetarian Asian cookbook. Traditional Asian food does not use dairy, so vegetarian recipes are almost always Vegan too! Observant Chinese and Japanese Chan/ Zen Buddhists have been vegans for over 1,000 years. Plenty of time to perfect a few dishes. Plus, you can even get a non-vegetarian book and just substitute tofu or one of the many Asian gluten meat substitutes. Also, PETA has some excellent vegan recipes. I love the fried chicken!

It isnt a cook book but I love vegweb.com. It has a ton of recipes that are all great. I especially love the easy cheesy pasta bake.

It's not strictly vegan, but you won't be at a loss for material. THIS IS AN EXCELLENT COOKBOOK IN EVERY WAY. I have lots of veggie (and enough that aren't!) cookbooks, and this is by far my favorite.

The Vegetarian Family by Runa & Victor Zurbel. It's out of print but you can usually find a copy on eBay. From the 1970s, kinda counterculture, but very basic recipes and charming accounts of raising veggie kids. It's the book I started with. More about teaching you how to get creative rather than exotic. This book is from a time when tofu and veggie burgers were not in the supermarket.
I know one site called recipe secrets where they provide top recipes that they serve in big restaurants.
How about this one? 14 oz can pumpkin, oatmeal, wheatgerm, light soya sauce, seasoning form into balls or patties and fry in oil. Note if your using in spaghetti U don't have to fry the fake meatballs in oil just cook them with the spaghetti. But for some reason they do taste better if fried in oil first! U Can use the above mixture for a fake meat loaf. I've fooled some meat eaters with this recipe.
