easy and quick dont matter, i have time and im a very good cook

Beans and cabbage and you can cook the next meal on the resulting gas
sorry to be flipant ,but i know many vegans and they all look very unhealthy
we nedd a balanced diet to remain healthy
Vegetarian is not so bad because it includes proteins ,.but being Vegan is pushing it

and you can eat a lot of bugs that are very healthy ,like flying ants,grasshoppers or grubs ,and you do not have to kill nice animals
i once cooke for 3 weeks for vegetariands ,with a minimum of 5 different dishes evryday nevr repeating one day
there are thousands of ways to eat vegetables .but only hundreds if it is Vegan
and all depends on what you can get
birds nest soup is very good but rare for example,many ways to eat pumpkin that is delicious but some ways include cream or butter or cheese so that leaves you out
etc.

pasta and tomato sauce

bamboo chutes, broccoli, stir fried in a little oil and sprinkled with soy sauce.

I wouldn't touch it, but my wife swears by it.

i would copy and paste a recipe here but there are toooo many that sound yummy to pick just one

i'm a vegan i eat this all the time
selfmade vegg pizza
or
chinese noodles

cook some noodles and drain
cook some mixed vegg and drain, i use (mung bean sprout, green onion, onion, hot peppers)
then mix them with some soysauce, and thats it

you can also add spicy bean paste, and hoishin sauce it's very good, I eat the noddle all the time

a classic salad and pasta with plain sauce, along with some nice drinks

Add tofu to alot of your dishes and it will add the extra protein that is needed in your diet and it takes on the flavor of the dish. It also won't cost you a fortune either. Grill it then cube it and combine it in a stir fry with some peanut oil, with bak choy, chestnuts, sprouts, snow peas, sliced carrots with lite soy after cooked, top with golden raisins and sliced almonds.
