Supercook vegi-gel, what do i add it to to make jelly?!


Question:

Supercook vegi-gel, what do i add it to to make jelly?

I want to make some veggie Jelly and have bought some vegi-gel stuff which looks like granuals and i guess its pectin based.

How do i use it to set Jelly.

I'm thinking of adding it to squash ( cordial ) , fruit juice , liquidised fruit......but have no clue what to do.

Vegetarian Society have a recipe for fruit jelly using agar-agar (link below). I guess it would work in the same way using the Vegi-gel.

I used to get packets of vegetarian crystals from Holland & Barrett, have you tried those? They may no longer be available, I haven't used them for ages.

Super Creamy Veg-Gelatin Fruit Salad

Ingredients (use vegan versions):

1 package (3oz.) vegan gelatin substitute such as Carmel's unsweetened gel, KoJel's
unflavored gel or Hain Superfruits (any flavor) (check label to be certain that whichever
brand you choose is vegan)
1/2 cup cold water
1/4 teaspoon lemon juice
1 can (8oz) crushed pineapple, drained
1 cup boiling water
1 package (3oz) Tofutti Better than Cream Cheese (or any other tofu "cream cheese")
2 cups non-dairy whipped topping such as Soy Whip (it's vegan!)
optional: coconut flakes, cherries and/or peaches

Directions:

In a bowl, dissolved "gelatin" in boiling water; stir in cold water. Chill until slightly thickened (about 1 hour, you can let it set completely and the salad will have a different texture, it won't be as creamy).

Next, in a small mixing bowl, beat tofutti, lemon juice and whipped topping until smooth; stir into gelatin. Fold in pineapple. You can also add coconut flakes, cherries, peaches, whatever! Chill until firm, about 3 hours. Voila!

Serves: 6-8

Preparation time: approximately 4 hours

I use a bottle of oasis. Or dilute squash.

Blueberry smoothie is nice, the liquid pectin in blueberries will help it to set!!! Strawberry or apple juice would be nice. Do not add pineapple as it contains powerful enzymes. This may affect the vegi gel and it might not set at all!!!

I have used Vegi-gel to make jelly using orange juice (pure juice, not squash). It did set, but was softer than gelatine jelly. I followed the instructions exactly, so it may be better to use a bit less liquid than the packet tells you.
