pasta with veggies

Sautee a variety of mushrooms (sliced) in a pan with butter and garlic. Turn the heat down and add 10 oz. double cream. Season to taste with salt and pepper. Stir over low heat until sauce thickens, then put cooked pasta into the sauce and mix it up until the pasta is completely coated. Garnish with parmesan. Delicious!!

Try layering lasagne sheets with veggies. I fry onion and garlic, add chopped mushrooms, tomatoes (and anything other veggies you like). Make a cheese or white sauce and then layer starting with lasagne sheet, then veggie and then sauce. Keep layering until you've run out of ingredients and finish with layer of sauce sprinkled with cheese and a bit of ground pepper. Bake in oven 180 degrees electric (I think no. 5 gas) for about 45-50 mins. Takes about 15 mins to prepare and 2mins to eat!!!

penne pasta with roasted vegetables and a pasata sauce mmmmm

Slowly fry an onion. Then add a tin of chopped tomatoes, then lots and lots of herbs, really lots, all your favourites, basil, oregano, majoram, rosemary, chives and MINT. It will become a slightly murky colour, then simmer it all together for a time. When the pasta is cooked tip it into a colander and into the still hot cooking pan melt a big blob of butter and into that stir in a crushed clove of garlic (shouldn't need any more heat), tip the drained pasta back in and stir it around to coat it. Yum. Simple pleasures!

Penne pasta with pesto, roast peppers, feta cheese and parmisan cheese shavings.
Just roast the peppers already sliced in strips, cook the pasta in plenty of boiling water and salt, drain and pour it in a wok, add the peppers, feta cheese in cubes, pesto. Add the parmisan at the end.
I buy the pesto and feta from Lidl, very cheap and the best I found, I tried the very expensive brands as well but they are not as good.

It has noname but I love my dish. Basically it involves cooking spaghetti and while it cooks get a big bowl and chop (for 2 people) about 40 cherry tomatoes in half, add about 30 black olives, 3 tablespoons of olive oil, 3 garlic cloves crushed and loads and loads of basil leaves chopped. Then last but not least 1/2 tsp of crushed chillis. Put the pasta on a plate then add the tomato thing and then add some chopped feta cheese on top. I LOVE This

Baked ziti with a creamy ricotta/parm/mozzarella cheese layer

Cheese mixture is seasoned with minced garlic, fresh ground pepper, oregano and a couple secret ingredients that make it my own, all bound with a lightly beaten egg.

Cooked ziti, mixed with a non-meat pasta sauce - layer 1/2 in baking dish, add cheese filling in a thick layer, cover with remaining sauced ziti, a layer of grated cheese and a final few extra ladles of sauce to keep all moist.

Cover and bake for 35-40 minutes in a 350 degree F / gas mark 4 oven. Remove cover, bake further 10 - 15 minutes. Carefully remove from oven and allow to sit for 10 minutes before serving.

Guaranteed hit - have made this for weddings and was very well received!
