I need good, simple, vegitarian / vegan recipies?
I want to start eating healthier, and living healthier. But living with my parents makes it hard, so I want to be able to do something simple, and make my own food. I've looked up tons of websites, and things like that, but they all call for onions, and peppers, and I don't like that stuff. Can anyone suggest something?

In the search engine at the top of the page type vegetarian/vegan and it will take you to the search results, then click on the category sign at the top of the page and it will take you to several thousand different vegetarian and vegan recipes. Once you are in the category, you can type in a certain ingredient you are thinking about cooking with, and the search results will give you only recipes that have that ingredient used in them. It's a great website, check it out.

one roll low fat crescent rolls in dairy dept flat en and spread on a 9/12 cookie sheet bake as directed. when cool mix half cup fat free miracle whip with 4 oz. fat free cream cheese mix together and add 1 pkg hidden valley ranch dressing (dry package) spreed on cooled pastry . add any veggie u want. i like carrots, broccoli, tomatoes and olives top with low fat cheese all chopped fairly fine. cut in size u want and enjoy Keeps very well in refrigerator

Anything that is non-vegan you can create to become vegan. For example, let's say you love spaghetti sauce with meat. You can create a wonderful and healthy vegan spaghetti sauce by using the same spices, the same tomato sauce. Instead of cooking the sauce with ground beef, you would substitute mushrooms or even marinated textured vegetable protein. You could also use seitan or tofu. Simply marinate any of these lovely soy and vegetable protein products first overnight in an Italian dressing. These will all absorb any flavor you want them to.
Let's say that you love Hungarian goulasch. You can still make a wonderful vegan Hungarian goulasch by using textured veggie protein, seitan or tofu. Cut the protein substitutes into the size you want...like 1 inch cubes, for example. Next, marinate the protein you've chosen overnight in an olive oil, paprika and black pepper marinade. Add these to the goulasch sauce and serve over potatoes or noodles and with a side salad. Voila! A wonderful Hungarian goulasch a la vegan...and extremely healthy!
You get the point by now. You can buy the textured veggie protein and tofu in any good grocery store or health food store. You can make the seitan yourself (the Buddhists like me call this "meat wheat") by kneading high gluten flour 15 times. You would take 2 cups flour and add enough water to make for a stretchy dough...start with 1/4 cup. Add more flour or water until you get a consistency that is easy to work with. Oil your hands if the dough is sticky. Any bread flour is high in gluten. After you have kneaded the flour 15 times...about 20 minutes of punching and pulling, cut the gluten into cutlet-sized pieces. Cook these "cutlets" for 30 minutes at a slow simmer in a flavored broth. You can cook them in any good vegan broth...they make them in all flavors! Remove the "cutlets" from the broth. These can further be cut into strips, cubes or even smaller pieces that can be used in just about any recipe as a meat substitute. Seitan can be put into the refrigerator for up to 2 weeks and frozen for 2 months.
