go to marks and sparks get 4 asparagus lasagne's thay are to die 4 and are 2 for 3 quid at min. With a really nice salad. and if your having a starter wild mushroom risotto from there 2 with frech bread mmmmmmmmmmm. and all you hav e to do is put it in oven or microwave mmmmmmmmmmmmmm

half 4 green/red peppers, stuff with chopped mushrooms and onions or plain stuffing, bake in the oven for half an hour and serve with a bed of rice on the side.

Veggie Chilli but taste better if you make a good few hours in advance.
Vegetable stirfry. really nice crisp veggies like mange tout and carrot and onion stir fried with some soy sauce, garlic and chinese five spice. Maybe sling some sesame oil in at the end too if you like. Throw a teaspoon of sugar in the stirfry whilst still in the pan. It adds some extra umph. then just serve it with some good brown or basmati rice. Ooh I'm salivating just thinking about it.
1. Quorn ceaser salad. fry quorn pieces and onion add to salad leaves with ceaser sauce, grate over parmisan cheese add croutons
2 Pasta arbitarra. any type of pasta with shop bought sauce" arbitarra" heat and serve with fresh french bread

i myself am a vegetarian. vegetarian chili. a salad. or even try these fantastic vegie burgers i got off line! all the burger has in it is brocoli, cauliflower and black-eyed peas. try it with some bbq sauce and it is excellent!
Chop 2 green bell peppers into chunks.
Chop one sweet onion into wedges.
Sautee in a wok or large skillet with a tbsp oil until tender.
Add 2 regular sized cans of red beans, liquid and all.
Season with cajun spice, chipotle, or chili powder or Franks Red Hot.
Add two packets of Uncle Ben's Brown Ready Rice.
Mix until heated. Serve with a dollop of sour cream if desired.
Add pita or tortilla chips if it's in the budget.
THIS IS A FEAST. I love this dish.
Vegatable Fajitas. Simple and tasty.
Vegetable chili is good and veggie curry is good too, they are easy to cook and can be served with rice and crusty bread.
For pudding try wrapping some pears in puff pastry and sprinkle with sugar and bake in a med to high oven until pastry is golden brown and serve with cream or custard.
Or you could just make a large pan of vegetable soup and add all your fave veg and serve with nice bread :-)

That's a tall order! I would say Baked Ziti casserole, a garden salad and crusty bread.

Cheap & Easy
Veggie tortillas/ fajitas are tasty and can be cheap!
You need a pack of tortillas/ wraps (min 2 each), some filling and grated cheese. If you can afford it, some guacamole and sour cream is good too!
For the filling I do a stir fry of chopped veg (green / red/ yellow peppers, onions, and some tomato paste / canned chopped tomatoes. Add some paprika/ cayenne / mex spices for a bit of bite. If you don't fancy this try veggie chili. Whatever you chose, don't make it too wet.
Plop the filling on a warmed tortilla, top with sour cream and cheese and then wrap it all up. Yum!! Serve with some tortilla chips and beer for my favourite meal!

Southwestern Black Bean Soup
1 onion
3 cloves garlic
1 yellow or orange bell pepper
2 jalapenos (if you like your food really spicy add three)
2 tbsp olive oil
1 tomato
4 cans black beans
2 tbsp ground cumin
1 tbsp chili powder
1 can organic tomato sauce
3 cups organic vegetable broth
salt and pepper to taste
In a stockpot or large soup pot sauté onion, garlic, bell pepper and jalapenos in olive oil. When onions begin to become translucent add tomato. Drain two cans of the black beans and add to the pot. Mash up the other two cans of black beans and add to the pot. Add tomato sauce, vegetable broth, cumin, chili powder, salt and pepper. Bring to a boil, then reduce heat to medium low and cook for about ? hour.
Bread
For the starter you can make a selection of vol-au-vents with different fillings. Get some ready rolled puff pastry, then with a round cutter cut out lots of circles. With a smaller round cutter make an indentation into each circle (without going all the way through). Pop in the oven, when they have risen and started to brown take them out and just push the centres down to make a perfect pastry case. For the fillings you can have cheese and tomato (like a mini pizza), mushrooms with parsley and chives or roasted vegetables sprinkled with paprika. You can make the fillings in advance and just put them into the pastry cases once cooked then return to the oven for a few minutes to heat through.
4 bags of cheese n onion crisps or salt n vinegar butter or margerine as many slices of bread as you need place crisps between slices of bread and walla crisp sandwiches mmmmmmm
Fajitas!
Buy a couple of those packs that contain the tortillas, salsa & spices, and follow the instructions using a couple of peppers and a packet of Quorn fillets.
Serve it all up separately along with some guacamole, soured cream and grated cheese, and let everybody put their own fajitas together.
Scrummy
Sweet potato and pea curry is really simple cheap and different.
To serve four:
3 tbsp curry paste from a jar
1 onion, finely chopped
450g potatoes, cut into chunks
2 large sweet potatoes (about 900g) cut into chunks
600ml vegetable stock, from a cube is fine
400ml can coconut milk
175g frozen peas
small bunch coriander, roughly chopped
Heat the curry paste in a large pan and stir in the onion. Cover and cook for 5 mins, stirring occasionally, until softened. Add the potatoes, stock and coconut milk to the pan and bring to the boil.
Turn the heat down and simmer the curry for 20 mins until the potato has softened. Add the peas, bring back to the boil and simmer for 2 mins more. Season to taste and spoon the curry into bowls. Scatter over the coriander before you tuck in.
YOu can serve it with microwave rice (i recommend lemon and rosmary microwave rice by "uncle ben")
Get hold of a cheap book called 'The Vegetarian Student Cookbook' or similar title. I have two and the recipes are desiged to be used save time and money and not on taste! All recipes are sooo easy to do
If you can find some curry noodles (like liptons or something) make those, fry some tofu beef strips (3 mins) add beef strips, baby corn and water chestnuts to curry noodles and top with green onions. Serve some nice naan bread, or salad on the side. This will take about 20 mins and cost about $12-$14 total.
