Do you want to be Vegan or "Lacto-ovo" vegetarian....in either
case...no meat.....lacto-ovo means you still eat milk and eggs,VEGAN means no animal products at all..no animal broths, or by-products...no lard, no milk,cheese....dairy of any kind....no egg or egg substitutes.
Good for you for taking the first step towards a compassionate and healthy diet! My husband and I have been vegetarians for about 6 years now and can't imagine how we ever ate animals! Being vegetarian generally means not eating meat or meat products. We are lacto-ovo vegetarians which means that we do eat eggs and dairy products. Vegans are vegetarians who eat no animal products whatsoever, including eggs and dairy.

Anything containing meat or meat products. But, why? Vegetables are not balanced with respect to the amino acid content of their protein, while meat is. If you do not pay attention to amino acid balance, you can wind up with various deficiency diseases, including a vitamin B-12 deficiency. It is possible to get all the amino acids (but not B-12) from eating an appropriate mixture of vegetables, but one must pay attention. Since food packages do not describe amino acid content, you will need to obtain a suitable book on nutrition and attend to it.

Well firstly I suggest that you check this site www.veggie123.com. There ia a lot of info on this site, and it will help you with nutrition.
So what should you not eat? Well meat. No beef, pork, poultry, fish, seafood, or other animal flesh. Some vegetarians dont eat eggs, and some dont eat dairy. But some do. It just depend on the person. Most vegetarians also dont eat products that contain animal flavoring. Like beef, pork, or chicken broth or bullion. We also dont eat gravy made with flesh.
What should you eat. Well obviously fruits and veggies. Pasta, rice, breads, beans, tofu, and fake meats are all great. They are all really good for you and taste great too. For some recipes try www.vegweb.com. There are tons of great vegetarian and vegan recipes on that site, and all of them that I have tried are delicious.

There are several categories of vegetarians, all of whom avoid meat and/or animal products. Sun Dried Tomato and Avocado Goooodness
(bread doesnt need to be vegan)
Ingredients:
several fork fulls of sun dried tomatoes
1/4 to 1/2 avocado (depending on how hungry you are)
wheat bread (watch out, some use milk products!)
tofu (optional)
Directions:
Toast bread (perhaps wait until other ingredients are ready).
Place desired amount of sun dried tomatoes on a small plate and microwave for approx. 35-45 seconds. When done, drain oil and pat dry (optional) and place on bread.
Slice avocado and place on vegan bread (it sometimes helps to mash it into the vegan bread to prevent sliding while eating).
Slice extra firm tofu and place on top of tomatoes.

This crunchy granola has enough protein and fiber to get you through the whole day!

o1 c honey
o1 c walnuts
o1 c raw cashews
o? c sesame seeds

o4-5 c rolled oats
o1 t cinnamon (optional)

o1 c raisins (optional)
DirectionsPreheat the oven to 350°F.
Melt the butter in the saucepan, add the honey, and mix well. Stir in the seeds, nuts, and optional cinnamon. Add the bran and optional wheat germ, then add 4 c rolled oats. If the mixture is very wet and sticky, add some more oats.
Spread the granola on a cookie sheet and place on the center oven rack.
Stir every 10 minutes or so, and add the optional raisins after 20. Bake for 45 minutes, or until golden brown.
NotesAfter the granola cools, store in in a tightly sealed container or plastic bag.
This granola makes a wonderful breakfast with yogurt and some fresh fruit (berries, peaches...). Or for a snack, try just a plain handful.
You can experiment with different kinds of nuts, dried fruit, and spices to find the mix you like best.
Tofu Stir-Fry
We call for a bag of broccoli flowerets to save cutting and trimming time. Choose extra-firm tofu; other types will fall apart during stir-frying. To serve, spoon the saucy mixture over quick-cooking brown rice.
Yields: 4 main-dish servings
Cook Time: About 15 minutes
Total Time: About 40 minutes
3 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon cornstarch
2 teaspoons vegetable oil
3 garlic cloves, crushed with garlic press
1 tablespoon peeled, grated fresh ginger
1/8 to 1/4 teaspoon crushed red pepper
1 bag (12 ounces) broccoli flowerets, cut into uniform pieces if necessary
8 ounces shiitake mushrooms, stems removed, caps sliced
1 medium red pepper, cut into 1-inch pieces
1 package (15 ounces) extra-firm tofu, patted dry and cut into 1-inch cubes
3 green onions, thinly sliced
1. In small bowl, whisk soy sauce, brown sugar, and cornstarch with 1 cup water; set aside.
2. In deep nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add garlic, ginger, and crushed red pepper and cook 30 seconds, stirring constantly. Add broccoli, mushrooms, and red pepper and cook, covered, 8 minutes, stirring occasionally.
3. Add tofu and green onions and cook, uncovered, 2 minutes, stirring occasionally. Stir soy-sauce mixture to blend and add to skillet; heat to boiling. Boil 1 minute, stirring.
Southern Fried Vegetarian "Chicken"
This dish is deep fried, so it isn't particularly healthy, though it is cholesterol-free and it sure is good! Deep fried seitan and a blend of spices create a dish that's really quite similar in appearance and taste to chicken!
INGREDIENTS:
?1 tsp salt or seasoned salt
?1 tsp onion powder
?1 tsp garlic powder
?1 tsp black pepper
?dash cayenne (optional)
?1 1/2 cups flour
?1/4 cup nutritional yeast (optional)
?1/4 cup prepared mustard
?2 tbsp baking powder
?1/2 cup water
?1 lb seitan or other chicken substitute, cut into 1-2" square pieces
?oil for frying
PREPARATION:
In a medium to large bowl, mix together the salt, onion powder, garlic powder, flour, black pepper, cayenne and nutritional yeast.
In a separate small bowl, whisk together the mustard and water. Add 1/3 cup of the flour mixture to the mustard mixture and combine well. Add baking powder to the flour mixture and combine well.
Coat pieces of seitan or mock chicken with the mustard batter, then coat each piece with the dry flour mixture.
Fry chunks of "chicken" in the oil on medium-high heat in a large skillet for 3-5 minutes, turning once until golden brown. Drain on a paper towel, serve with ketchup or barbeque sauce and enjoy!
Tip: If your chunks are turning brown or black rather than a crispy golden brown, your oil is probably too hot! Reduce the heat a small amount and try again.

...unwilling to eat fish, eggs, any dairy products, wear leather, and don't want to even deal with anything that has any connection with a dead animal (like Jello)? Congrats, you're Vegan...you poor soul...
Your diet as a vegetarian depends on your choices, so listen to your own voices, just be careful to watch that you get enough of the basics of nutrition, as this can be an issue, especially in regards to protein consumption.

Make lentils and chickpeas your friend! Good for iron and protein but ensure you eat something with vitamin c (eg capsicum, oranges, potatoes) at the same time. This helps the absorption of iron.

You really should read about vegetarianism. You avoid animal flesh as well as anything that comes from a dead animal (animal rennet, gelatin) Animal rennet can be found in many cheeses and gelatin is found in many yogurts, candy, marshmallows.

Okay, well first, get some serious research done.
My first question is this: how can you want to be something when you don't know what that something is?
Most people know that vegetarians don't eat meat--this includes all red meat, poultry, seafood, everything. Don't ask about chicken and fish, please. It's not vegetarian.
Veganism is very complex. It's a lifestyle, but it's worth it. No meat, dairy, eggs, honey, or ANY OTHER ANIMAL PRODUCT. No animal testing. No animal ingredients in make-up, shampoo, etc. No leather, fur, wool, silk, etc.
Actually, person above me, seafood isn't considered meat to vegetarians.
In order to be a vegetarian, do indeed stray away from meat or any food with meat included. Now, if you want be a Vegan, don't eat eggs or anything else that comes from animals. This is called a byproduct.
