I like pasta with grilled veggies and chunky fresh tomato sauce... good bread with EVOO and herbs to dip... nice bottle of regional Italian red wine...

hmmm...it's eggplants salad with tomatoes...
or...spaghetti with ketchup

That depends on who you ask. I like teriyaki stir-fry over brown rice but that does not mean it will be the "best" for you.

stuffed peppers with rice, mixed vegetables, egg plant pressed and baked with lemon and garlic pepper, served with a smile.

check out ethipoian cuisine.... usually their veggie dishes are all vegan.

Sushis, there are vegetarian ones and, if you go to a good restaurant, they're really good.

Peanut butter sandwich.

i really love the standard homemade mac and cheese. a milk, butter, onion, flour, and cheese sauce and baked, mmm, good

Tofu and stir-fry (broccoli, rice, peas, etc.)

GO VEGETARIANS!

wow--- choices choices choices!
contrary to meat-eaters' opinions, the vegetarian diet can be the most varied diet of all. Few vegetarians get stuck in the same ruts as many meat-eaters: meat, starch, side of veg.
There are so many cuisines to choose from.
I love Indian food--- The Indians have perfected variety in their use of beans, rice, vegetables, etc.
Asian food offers a huge variety of choices-- tofu, tempeh, etc comes from there and is prepared hundreds of different ways, sea vegetables add to the familiar list of veggies
Mediterranean (Greek, Italian, etc) food adapts well to vegetarian
Vegetarian Mexican food rocks!
I love it all (unfortunately for my waistline!)

EGGPLANT ENCHILADAS:

Slice the eggplant thin and cook it about 1/2 way on a skillet with vegetable oil... (for about 3 minutes). Then, take tortillas and dip them in enchilada sauce... fill with the eggplant (it will finish cooking in the oven), cheese, onions, spanish rice, whatever you like. Bake for 10-15 minutes at about 300 degrees. It's great!...and can be served with chips and salsa or beans.

meal 1
pan fried tufo, crunchy on the outside, with garlic brownsauce dipping sauce
white rice
kimchi

meal 2
pho like noddle soup, no meat, no meat juice whatsoever
just noddles, cilentro, lime juice, jalop[eno, hoishien sauce, soysauce, mung bean sprouts, sliced onions

meal 3
vegg pizza, no cheese
extra homemade marinara dipping sauce

margherita pizza from bertucci's. it does have eggs and milk, so it's not vegan, just vegetarian.

BIG T-BONE STEAK WITH MUSHROOMS, A LEG OF LAMB AND A COUPLE BEEF HOT DOGS

if you're looking for a quick meal like a frozen dinner, my two favourites which I recommend are Amy's cheese enchiladas and Ethnic Gourmet's Pad Thai with Tofu.
