Vegeterian recipes without veggie meat?!

Question:

Vegeterian recipes without veggie meat?

Does anyone have vegeterrian recipes (no meat, but milk/eggs OK) that do not include veggie meat (veggie burger, ect.) or tofu?

Answers:
An all vegetarian version of an otherwise well known meat dish. The name "fajitas" refers to the type of meat used in the traditional version. In this recipe the meat is replaced with onions, sweet peppers, corn and beans.

I N G R E D I E N T S
2 teaspoons vegetable oil
1 cup quartered, sliced onion
1 cup red, green or yellow bell pepper strips
1 (15-ounce) can black, pinto or kidney beans, drained
1/2 cup frozen whole kernel corn
1 (1.25-ounce) package Taco Seasoning Mix
1/3 cup water
1/4 cup chopped fresh cilantro
6 (6-inch) fajita-size flour tortillas, warmed

I N S T R U C T I O N S
Heat vegetable oil in large skillet over medium-high heat. Add onion and bell pepper; cook, stirring occasionally, for 3 to 4 minutes or until vegetables are tender.

Stir in beans, corn, fajita seasoning mix and water; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 3 to 4 minutes or until mixture thickens. Remove from heat; stir in cilantro.

Spoon 1/2 cup fajita mixture onto each tortilla; fold in half.

Here's a list of foods that are very easy to cook exactly the normal way, and just leave out the meat:

Spaghetti, lasagne, almost any pasta dish, tostada (beans, tomato, onion, olive, salsa, guacamole, etc., whatever you like just not meat), burger or any sandwich (put in your lettuce, tomato, cheese, whatever you like, just no meat), chili, quesadilla, steamed mixed vegetables, any rice dish, etc.

When you think in terms of cooking what you would normally cook, and just leave out the meat ingredient, it becomes very easy to eat in a semi-vegetarian fashion.

I used to have a vegan chili recipe from vegetarian times magazine that called for equal parts of ground celery and ground carrots with about a cup of spice (think it was the cumin) and some chili powder, chopped onions, minced garlic, red kidney beans and mushrooms cut into quarters (stem and all). the spice gave a brown color and made the celery and carrots look like meat. People watching me eat it at work could not tell the difference. It was very spicy. Would take the hair off your head and not need a coat in the winter. But it was good. Lost the recipe.LOL.

veggies!!!!!!!!!!!!!!!!!!!!!!!

Stir fry veggies over brown rice
Pasta with olive oil, garlic and broccoli
Veggie stew
Marinated grilled vegetables
Vegetarian paella

There are so many! There are also hundreds of websites with vegetarian recipes. Almost any dish can be made vegetarian. Many people replace meat with mushrooms or beans.
