no. carrots don't really have a 'skin' - the outside is just the same as the inside (except grubbier)

The outer layer of the carrot does contain the most vitamins and nutrients. Enough so that you should never actually peel a carrot...you should just scrub it clean with a vegetable brush.

Better to scrub the carrot with a hard brush.
Also try to buy organic grown carrots.
IN answer to your question, if you peel away the outer layer of any fruit or vegetable, you are taking away some of the nutrient value.

No. The carrot contains Vitamin A. Shaving the skin just cleans up the carrot.

I don't know about the vitamin value change - but I am sure that the carrot is screaming bloody murder about having its skin shaved off. It is a living thing after all..................

I agree with hot.turke.. the carrot is the same inside as out, except the outside has been in contact with earth and should be cleaned thoroughly. I scrape it with a knive, not peel, altho scrubbing with a brush works well too.

i like to peel my carrot if im having it raw, if im cooking it, it stays unpeeled
