Generally winter vegetables were root vegetables that could be stored in a cool basement in days before we had canned and/or frozen vegetables or the gift of having fresh vegetables from around the world at all times. They were hardier vegetables that did not spoil easily or within a short time. If you get hold of an older cookbook you will find more concise lists of winter vegetales.

There are so many. Kale is my favourite though. Many kinds of kale too.
