The red stems strewn among the lush green leaves are delightful to look at and the contrast between the crunchiness of the former and the tenderness of the latter is pleasing to the palate. The roots can be steamed, boiled, baked, roasted, or parboiled then grilled.

Yes! I wash the greens, tear them into bite-size pieces, and saute them with chopped onion and garlic in olive oil. Then I serve that alongside the roasted and sliced beets. It's the best way to eat them!

YES!! I steam the whole bundle. I chop off the stems and leaves and put it all in the steamer. They are very nutritious and mineral dense.
