I am working in a catering industrial plant as a purchasing assistant, i am looking to collect information about the specifications of the vegetables, and to learn how to buy the vegetables.

I've alway found it best to do my own research. Since you apparently can't talk about it with your boss, ask the people/companies that are currently being used. Make your queries in the presence of your superiors, as it will show initiative & a quest for knowledge - not secretly, like you are trying to go over their head.
