There's a book called "The Idiots Guide to Being Vegetarian", by Frankie Avalon Wolfe. Buy the second edition. It's a great book, it's not preachy, it's not boring and the author shares some personal experiences with the reader. It gives you the ethical and health reasons to be a vegetarian, as well as great meal ideas, how to be a vegetarian in a non-vegetarian world and even how can your pets be a vegetarian as well, lol.

The best book I've ever seen is "The Vegetable Passion" by J. Barkas.
It's out of print but you can get it from Abebooks.com or have your local library order it.
Edit: Just so you know, there are no recipes in the book. It deals with the who, where, when, why and how of being a veggie

The Millennium Cookbook, from the restaurant of the same name is a fantastic book. Very creative vegetarian and vegan dishes that even sound good to a die hard meat eater like me, lol.
