You don't have to cook them to eat them, but they taste much better cooked. Heating them brings out the sugars.

Potatoes turn dark in the plain air unless they're cooked. You can eat them raw. It won't hurt you, but I suspect people cook them because they look unappetizing when they turn dark. On the other hand, apples turn dark as well. You can put lemon juice on them to keep this from happening. This doesn't really change the taste of an apple but it would make a potato taste odd. Since potatoes are usually served at a meal - not eaten like an apple - they're cooked so they look appetizing as well as taste better.
First, the taste is better.Second i think that raw potatoes can cause fever. When i was little and want to skip school i eat one raw potato in the night and next morning my body temperature raise.I got that "recipe" from my childhood friends, i dont know about scientific explanation of it but it always work for me.
You do NOT have to cook potatoes! I ate them right out of the garden when I was a child. Wash the dirt off a bit and chomp away. However, when it comes to eating meals - they just taste better when they are cooked.
My grand daughters have even eaten raw green beans, right from the garden. They love them.

You don't have to cook them and they won't make you sick if you don't. Just wash them good. I personally love a raw potatoe! I just pick one out of the sack,wash it good,then peel it and sprinkle salt on it and munch away. Potatoes have alot of potassium in them,which is good for you,so munch away!
