My boyfriends family are coming round fro dinner and they're vegan. Any idea's on what to cook, or where i can find any good recipe's?

Failing that, pulses, beans lentils.

Don't cook them with your leather shoes on though.

you can always try the foodnetwork.com. they should have some ideas for you. or you can always cook something with beans or tofu. steamed tofu in soy sauce is always a crowd pleaser and you can make other little sides to go with it. like rice, veggies, and there should be another protein. don't think of making one big entre think of making many little ones so you can all enjoy it family style.

Go to your backyard and find some nice tasty mushrooms and make a tofu stir fry with them - make sure your boyfriend and yourself don't eat them tho. make a seperate tasty meat dish for yourselves, like a big juicy steak

Veggie's, Lintel nut roast, oatmeal patties, ect., ect.

Try a vegetable curry:

Gently fry a chopped onion and sliced mushrooms in a saucepan for a couple of minutes. Add a couple of cloves of chopped garlic and a chopped green and red chilli. Stir in curry powder/paste (as much or as little as you like depending on strength of the curry and how you like it - I generally use a desertspoon of hot powder and a desertspoon of madras paste but you decide which you like best). Cook for another minute or 2 over a gentle heat before stirring in 2 desertspoons of plain flour. Cook for another couple of minutes.

Then gently add 1/2 pint of hot veg stock and stirr to make a thick sauce. Add a tin of chopped tomatoes, stirr and then add your fave veg - I generally use a large diced potato, broccoli spears, carrots, baby corn and peppers. Cook very gently until the veg are almost cooked to your liking. Throw in a handful of frozen peas and some spinach, simmer for another few minutes and then serve - very quick, easy and colourful curry !!!

Vegetable Stir-Fry

Ingredients
1 large white onion
1 large bunch of brocolli
2-3 carrots
3-4 scallons
alfalfa sprouts
1 can Skallops (optional: these are textured vegetable protien and may be hard to find)
1 cup rice(uncooked)
Vegetarian Stir-Fry sauce
vegetable oil
Preperation:

Before cooking cut up vegetable however suits your individual tastes and talents. Open and drain Skallops and cut into smaller pieces

Cooking:

Following the direction on bag begin cook the rice and set aside. In a seperate, large frying pan or wok heat vegetable oil. Slowly add brocolli, carrots and onion. Stir-fry several minates untill onions are slightly brown and brocolli is a deep green. Then add Skallops and scallons. Mix. Add sprouts. Mix. Stir in 1-2 tablespoons stirfry sauce untill all veggies are evenly coated. Add rice and stir. Finally add 1-2 more tablespoons stir-fry sauce and mix untill rice is brown. Serve.

Serves 1-2 people with leftovers for 1.

Ingredients

Crust:

? cup margarine, melted
1? cups graham cracker crumbs
3 tbsp honey or light corn syrup
Filling:

1? cups semisweet chocolate morsels
2? cups extra-firm silken tofu
3 tablespoons honey or light corn syrup
for Crust: Combine melted margarine, graham cracker cumbs and honey in a bowl; stir to mix well. Press mixture into bottom and 1 inch up sides of a 9-inch springform pan. Bake in a preheated 350° oven 8 minutes. Let cool, then refrigerate.

For Filling: Warm the chocolate morsels over low heat, stirring often, until melted and smooth. Set aside to cool. In a food processor, blender or mixer, blend the tofu until smooth. Add honey; blend until mixed. Add melted chocolate; blend until smooth and creamy.

Pour filling into chilled crust. Refigerate until firm. If desired, decorate top with chocolate curls. Serve chilled.

VEGANS (Do's)
**ALL Fruit & Vegetarbles (all greens)
**Vegans like Organic veg & fruits if you can get them
**Vegans are fine with ALL soya based products (such as soya milks, soya yogurts, soya cream, soya ice creams, soya sauces)

**ALL nuts are OK and fine, inc sweet chestnuts.
**Some Vegans wont take sugar or honey so you might need to check that one with them?
**Maize, maize flour, polenta, All potatoes including sweet potatoes, millet, pasta, & gluten free pastas. Whole grain brown rice and also white bismati rice are OK.

**Dairy products are generally OK although vegans probably wont eat eggs (some do some dont?) so ask before they come to dinner.

Once you get over the "no animal what so ever" It's kind of easy. In the produce section of your supermarket and sometimes in the frozen food section are "meat replacement" items. 100% soy proteins and tofu. If you are a meat eater (like I am) it might not taste "right" but you can adapt. If they are truelly Vegan it means no eggs and no milk or milk product. Soy milk easily replaces cows milk with little effort, but be careful. If you are putting it in a savory dish, make sure you get the plain, unsweetened, no flavored kind. Vanilla soy milk can ruin a sauce.
Another suggestion is to ask his family. It maynot be such a big suprise when they get there but they might be very greatful.

Meat and Potatoes (just a saying) Ok, Eggplant Parmagane, with soy cheese, and make your own tomato sauce. Rautaoulee, French eggplant stew, add some extra firm tofu cubes at the last for a heartyer meal. Turn your favorite chinese dish Vegan by subing tofu or meat replacement for the meat. Mousacca (sp?) is a Morroccan eggplant dish that layers eggplant and tomato sauce. Just remember veggie oil only no butter. Vegan is easy if you remember the rules.

Pasta with tomato-chili sauce with coriander and lime
3tbsp of olive oil
4 spring onions
1 fresh chili deseeded and chopped very finely
two garlic cloves chopped very finely
200grams/7oz of canned chopped tomatoes
salt and pepper
350grm of farfalle (egg free)
juice of half a lime
6tbsp of chopped fresh coriander

Heat one tablespoon of oil in a frying pan over a medium low heat, add the spring onions and chili, then fry, stirring constantly, for three to four minutes until just soft add the garlic and fry until just beginning to colour, stir in the tomatoes, bring to the boil then simmer the sauce over a medium heat for ten minutes, stirring ,until thickened. Season with salt and pepper. Cook the past with plenty of boiling salted water until al dente. drain and transfer to a warm serving dish.

To the sauce add the lime juice, coriander and remaining olive oil.
pour over pasta stir well to mix, serve warm or at room temperature.

serves 4. I'm sure your guest will love this and you'll be tempted yourself ; )

If you don't fancy this try Cranks cook books, they have a lot of vegan dishes and are delicious!

Ask them what they want. The vegan diet is somewhat extreme and they surely can't swan round to the private home of a non-vegan and expect to be automatically treated to lavish vegan cuisine. Talk to them - maybe they can bring something? Doesn't your boyfriend have any ideas?

You can make a lovely curry with sweet potato or butternut squash and lentils. Bake chunks of the veg with a little oil in the oven 200degs celcius or gas 5 for 20-30 minutes. in the meantime chop a couple of onions and gently fry them in oil with your favourite curry powder or paste and seasoning. add a vegetable stock cube in about 400ml or 3/4 pint hot water with about 80g or 2-3oz red lentils. Bring liquid to gentle boil then simmer for about 20 mins.If you have any spinach add this as well (you can buy it frozen) and/or some chopped coriander. Obviously you can add other veg if you like. Stir in the chunks of roast sweet potato once they are browned. Heavenly! Also tastes really good with some nutmeg, if you have some. Nice with rice or chapatis.
For dessert, a fresh fruit salad is lovely after hot curry. Try mango, pineapple and strawberries. To make a sauce, you can buy frozen summer fruits in bags. Simply heat the fruit gently with some sugar and about a tablespoon of water until softened, leave it to cool then serve as it is or puree with a hand blender.
If you're not good at cooking, just serve something like veggie burgers in buns with bbq sauce and oven chips, followed by sorbet (make sure it doesn't contain egg white). As long as you are relaxed and have a nice evening, that's the main thing. good luck!

You can make pasta e fagioli, it's an Italian soup with pasta, beans, and vegetables. You'll find recipes calling for butter and maybe even a meat stock, and these items are easily replacable with olive oil, margarine (provided it's vegan, Blue Bonnet is vegan), and vegetable stock instead. Remember to omit any cheese you may see in recipes.

You can pair the pasta e fagioli with some garlic bread made with margarine instead of butter (Blue Bonnet is a safe bet 'cause it's vegan), sans cheese of course, and a nice salad with lots of different types of greens. You can make the dressing, it's very easy. Place 1 part balsamic vinegar in a bowl, then slowly drizzle 2 parts olive oil into the bowl while using a whisk to blend well. Do this slowly, if you do it fast it won't emulsify well. Season with salt & pepper and voila, yummy salad dressing.

If you like, you can even put Bacos in the salad, since Bacos are made of soy, they have no animal in them at all.

For dessert, there are many options. If you get stuck, you can always serve fruit, either fresh or cooked. Try grilling, roasting, poaching in a sweet wine sauce, evey sauteeing. If all else fails, serve some cold, refreshing melon.

Veggie stir-fry is always good. You could make some kind of coconut curry or something else with coconut milk. Sautee the veggies with Olive Oil and add lots of spices.

Sure cook any thing that doesn't, have meat,egg,& is dairy free and you have it knocked.usually the mediterranean diet is good if you eliminate the above ingredents.you can find great recipes in The Mediterranean Vegan Kitchen by Donna Klien.a good vegan book ;and there are many more check them out and good luck.

Beans and rice is easy, with a veggie soup appetizer first. And maybe a hummus or eggplant appetizers. Or a nice pasta dish.
