Oh, it's for me! I've never had a cooked breakfast, but my fiance said he'd cook me one and asked me what I wanted in it!

beans and mushrooms and toast, some vegetarians eat eggs, some don't. Some will eat veggie sausages, some don't, you need to check how veggie they are!!

...and tomatoes

Lovely big flat mushroom, grilled tomatoes, scrambled egg (if they "do" egg), beans, potato fritters/rosti/hash browns and ketchup yum!

That depends what you like. I eat eggs and whole wheat toast.

Can do fried mushrooms, grilled tomotoes, poached, scambled or fried egg if they eat that, veggie sausages, toast, Bubble n squeak, beans, fried bread.

Or are you asking what is a "Vegetarian breakfast"?
A vegetarian breakfast contains no meat. Vegetarians eat vegetables, grains and beans.
A great vegetarian breakfast item would be a frittata. It's eggs and diced vegetables put in a casserole dish, put in the oven to cook for 30 minutes, yum!
You don't need to be vegetarian in order to enjoy this meal.

There is polenta or hash browns, with cheese and tomato, mushrooms if you like. I also like cooked brown rice or barley or kasha with honey and apples and dried fruit or vegetables.

Arrh, we run a vegetarian bed and breakfast so i think we, and our 5,000 guests a year, are qualified to answer !

If you're lacto-ovo, there's tons of stuff.

I like french toast with hashbrowns and Morningstar Farms veggie sausage links (with a little syrup on them). YUM.

Omelets are another option if you eat eggs. I like sauteed mushrooms & other veggies, a little veggie sausage (or none), cheese... mmmm.

I also make "egg mcmuffins" using Yves veggie ham.

If you eat eggs, can't beat fried eggs, toast and orange juice!

Vegetarian sausage, beans on toast, scambled tofu, sauteed muchrooms, Oatmeal, pancakes, waffles, the options are endless.

I am vegan and cook all meals so I am relatively positive I can give you some ideas...
Try a tofu scramble.It is really good with eggs, onions, green peppers, and tomatoes mixed in. Add a piece of whole grain toast, a glass of orange juice, and a couple of "sausage links" and you've got a complete meal!

I love morning star sausage links(bake them in the oven) with fried eggbeaters with melted veggie cheese and grits. Serve with a tall Ice cold glass of 8th Continent vanilla soy milk.
Delicious!

Tofu Bacon
Ingredients (use vegan versions):
* Firm Tofu
* Soy Sauce (or Tamari)
* Salt & Pepper if desired

Directions:
Preparation time: 30 Minutes.
This is a wonderful bacon substitute that is very simple. This works best on sandwiches.

Slice a cake of tofu in long strips that are about 1/4 inch thick. Fry them in a little oil, slowly, until they are golden.
Next, douse a couple of tablespoons of soy sauce into the pan. Make sure your heat isn't too high and just let them cook until they are crispy and firm, turning them occasionly. They need to cook a while so your tofu isn't mushy. Makes wonderful B.L.Teases!

Vegan Bacon
Ingredients (use vegan versions):
* 1 lb firm Tofu, cut into strips shaped like bacon
* 2 tablespoons nutritional yeast
* 2 tablespoons tamari/shoyu
* 1 teaspoon Wright's (or other brand) liquid smoke.
* 1 tablespoon oil (something neutral, not olive or sesame)
Directions:
Fry tofu strips on low or medium heat until they are crispy on the
outside. The best way to do this is to lay them in the pan in the oil
and let them sit for at least 10 minutes, simmering. They should turn easily after that. Turn them and give them another 10 minutes on the other side.
Mix the tamari/shoyu soy sauce with the liquid smoke first, then take the pan off the heat. Pour the liquid smoke/tamari into the pan and stir the tofu so all sides are coated, then sprinkle the yeast over all, stir some more, over the heat, until the liquid is gone and the tofu is covered with sticky yeast.
Try it. It tastes EXACTLY like bacon.
Another variation is to marinate the tofu in the tamari/liquid smoke mixture for several hours and then fry, but it misses a little bit without the nutritional yeast
