Quick and Easy Vegetarian Recipes?

I'm vegetarian and I feel like I've fallen into a rut when it comes to preparing food. I feel like I'm eatting the same thing everyday. So can anyone recommend some good Vegetarian recipes-perferabley simple ones,but any suggestions you can give me are cool. Also are there any good cook books or web sites that I can get vegetarian recipes from?

Try tandoori gobi:

Ingredients: 1 kg gobhi-cut into florets


For the masala
4 cloves
1/8 tsp broken cinnamon
1/8 tsp nutmeg-grated
4 cardamoms - seeds only
1 pinch of dry ginger
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp fenugreek seeds
1/2 tsp carrom seeds
1/2 tsp pepper powder
1 tsp garlic paste
1 tsp ginger paste
1/2 cup hung curd
1 tsp oil
1 pinch of red chilli powder
2 tsp salt
chaat masala and lemon juice to taste

Method: For the masala, grind the cloves, cinnamon, nutmeg, cardamom, dry ginger, cumin seeds, coriander powder, fenugreek seeds, carrom seeds and black pepper together to a fine powder.

Then add garlic paste, ginger paste, curd, oil, red chilli powder, pepper powder, and salt. Mix it well. The masala is ready.

Marinate the gobhi in the masala. Pierce the gobhi through skewers and cook in the tandoor. If you don't have a tandoor, cook in a very hot oven in a drip tray till brown and done.

Brush with oil and cook 2-3 minutes. Sprinkle chaat masala and lemon juice on top and serve hot.

Try grilled vegetable capachio:

Ingredients: 50 gm lettuce-cleaned, washed & broken
15 gm grilled onion rings
25 gm tomatoes-grilled & sliced
15 gm green capsicum rings-grilled
15 gm yellow capsicum rings-grilled
15 gm red capsicum rings-grilled
30 gm aubergine-sliced & grilled
30 gm cheddar cheese-sliced
25 ml olive oil
juice of 1 1/2 lemons
15 gm basil leaves
2 gm milled pepper powder
salt to taste
20 gm walnuts-roasted & crushed



Method: In a bowl, add olive oil, lemon juice, salt, pepper and roasted walnut. Mix well, season to taste.

On a platter, pile crisp lettuce in the centre. Layer the grilled vegetables around it.

Place cheese slices next. Drizzle the dressing over the top.

Serve garnished with milled pepper.

Do taste stuffed laukhi:

Ingredients: 1 medium lauki

Marinade
50 ml lemon juice
1/2 tsp chilli powder
2 tsp garam masala

Filling
2 tbsp oil
1/2 tsp cumin seeds
1 diced onion
150 gm diced tomatoes
3 chopped green chillies
1 tsp ginger paste
2 tsp chopped garlic
1 tbsp chopped coriander
200 gm grated paneer
salt and pepper to taste

Method: Blanch the lauki in boiling water. Peel, deseed and split horizontally

Pour the marinade over the lauki and set aside for an hour

Heat oil in a pan and add cumin seeds followed by the remaining ingredients for the filling. Stir-fry for 5 minutes.

Set the filling inside the lauki and secure with string.

Wrap in a foil and bake in a very hot oven for 15-20 minutes.

Serve hot with mint/coriander chutney.

I will share with you some vegetarian foods I realy enjoy, I will give you 1 idea for each meal of the day.

Breakfast fruit salid (or any meal)

you will need 1 grapefruit, 2 oranges, and half of an avocado.

cut in half and segment the grapefruit and oranges, next squeeze them into a bowl. Take the avocado half and cut it into small chunks then add it to the fruit. Enjoy!

Brown rice cereal for lunch (or any meal)

You will need 1 serving of cooked brown rice, soy milk or cows milk, cinnamon powder, (optional sugar and butter)

Take the cooked brown rice (optional add a small dab of butter to melt on it if you like, and sprinkle on some sugar) sprinkle on some cinnamon and pour on the soy milk or cows milk. Enjoy! on the side you could eat a salid or some munchy veggies.

Black bean burrito for supper (or lunch)

You will need 1 tortilla wrap, 1 can of black beans, some spices like (chili powder, pepper, garlic powder or minced garlic) head lettuce, 1 tomato and (optional cheddar cheese)

Start by opening and draining most of the liquid from the can of beans. Dump them into a bowl and mash them with a fork until they are all soft. Add some powdered or minced garlic to your own taste, add some pepper and a few pinches of chili powder. Chop and prepare the head lettuce and tomato. (optional grate up som chedar cheese) Take your tortilla wrap and put a few spoonfulls of the mashed beans down the middle. Add your cheese if you like. Then add the lettuce and tomato, wrap it up tight as you can and enjoy! some people like to add salsa as a dip for it.
