Will drying red bell pepper result in a loss of nutrients?

I want to dry my red bell peppers before use because they become sweeter and less hot when dry but i dont want to lose valuable nutrients especially vit c


Answers:
You will lose some nutrients from drying them. If you're *really* super concerned about nutrition freezing is the best method of preserving them but so what! Veggies start loosing nutrients the minute you pick them. If you'll eat more of them dried that frozen please feel free to do so since by consuming more of them you'll end up with a net gain of nutrition!

Remember that Paprika is nothing but dried powdered red peppers.

I have not heard of them losing nutrients when dried.
I cut mine up and freeze them. When thawed its like fresh ones.
