Romantic vegetarian dinner ideas?

I'm cooking for a guy for the first time this weekend :) We're both vegetarian (and I'm also trying to slowly eliminate dairy - my plan is to go vegan by my birthday later this year). Sadly, I'm not that good at cooking - any ideas???

The veggie sushi is a great idea.

Aside of cucumber rolls you can do avocado rolls, teriyaki TVP rolls (rehydrate your TVP in Soy Vey Wasabiyaki. Then press out the fluid before you put it on the rice.) Steam some red kale and make rolls out of that. The purple curly leaves poking out the top of a hand roll are just beautiful.

Find all sorts of odd decorative plates to put your various sushis on. Get different things for dipping. Use more Wasabiyaki, Nama Shoyu, Dill flavored Miso Mayo.

Oh and a good solid green tea to drink with it!!

Grab a bunch of rose petals and put those into the oven(425 F). Congratulation, you just made crispy rose petal chips! Spread some salsas over your rose petal chips and enjoy.

Cucumber Sushi! Its like sushi, but instead of fish, Cucumbers!

eggplant lasagna.

soy cheese, cheddar, Parmesan (soy only) tomato sauce, paste and slice the eggplant up, keep the skin on it...

put the cheese between the slices of eggplant along with the tomato paste... (you can add soy ground beef if you so like with the cheese) and bake it like lasagna.

serve with salad...

oh and candles.. with some wine... or sparkling wine with orange juice.
