Julie almost has it right for dessert ricotta. Just replace the parsley in her recipe with a teaspoon of either agave nectar or sugar as a substitute for the lactose that ricotta has in it. The N.T. should be kept in since it adds a hint of the slight cheesiness in ricotta. If you want to make the texture closer to that of ricotta *stir* in 1/2 tsp of Xanthan gum and wait 20-30 minutes for it to hydrate and duplicate the slight lumpiness of ricotta.

Edit:

Forgot that if you use the Xanthan you'll also add a half tablespoon of water! And if Julie is asking for binders the Xanthan is an outstanding binder!

Crumbled tofu can be substituted for cottage cheese or ricotta cheese in lasagna and similar dishes

I would take some extra firm tofu, crumble it up so it has the consistancy of ricotta and add some italian type spices to it- garlic powder, onion powder, basil and oregano, plus a little bit of olive oil.

Try silken tofu mixed with 1-2 Tbsp. nutritional yeast and 1 Tbsp. parsley. I used this in an italian dish and my husband and sons were none the wiser, until I told them, that is. Anyone know what would work as a good binder? Cornstarch?
