Salad with nuts like pine nuts and put heart of palm and corn and olives with all the veggies you can think of. Maybe soup (read ingredients) and cheese toast. Or mexican?

cook some whole wheat pasta, sautee some fresh or frozen spinach with s/p, onion powder, add a cup cottage cheese, toss with pasta, top with parm

6 servings
1 can diced tomatoes
1 can corn
1 can minestrone soup (ready to serve)
1 can mixed vegetables
1 can black beans, rinsed
Mix all ingredients in a pot and warm.
Slice tofu in strips
Season with salt, pepper, and garlic
Pan fry tofu in olive oil
Place on top of fresh greens(lettuce,endive,etc.)
Sprinkle with oil & vinager or vegetarian blue cheese dressing
Top with Fake Parmesan
Goes great with "Potatoes & onions"
Pan fry slices of potatoes and onions in olive oil with salt,pepper, and garlic. You could add a little parsley after frying

vegetarian pizza. i make it all the time and i'm not even a vegetarian!
you can buy the dough pre-made (like boboli) or make it from scratch. i make it myself. it only takes about 10 minutes.
(dough)
2.5 cups flour
1.5 tsp salt
1 cup water
2 tbsp. olive oil or vegetable oil
2 tsp. active dry yeast.
(toppings)
your fav spaghettti sauce
1/2-1 cup shredded mozerella cheese (depends how much cheese you like)
1 small tomato sliced (per pizza)
a few onion slices (per pizza)
mix 1 cup flour, salt, and yeast. combine oil and hot (hottest from the tap) water. add water/oil to flour mixture. use a blender for 3 mintes or beat by hand until smooth. add remaining flour and mix until a think dough forms. knead on a well floured surface about 10 times.
divide dough in half to make 2 small (about 8"-10") pizzas. spread dough onto a baking sheet or pizza stone if you have it. shred mozerella cheese and spread it over dough. this makes and extra crispy bottom crust. spread your fav spaghetti sauce on top of that. slice up some tomatoes and add a few onion slices for toppings. i usually add a little oregano and basil for extra kick. top the whole thing withanother layer of cheese
bake at 400 degrees on center shelf for 25-30 mins. or until crust begins to brown.

a dish of rice with gravy & mushroom
I often add sliced bits of veggies to the rice and steam the rice.. and heat the mushrooms with mushroom gravy and serve with rice add a few slices of tomato on top for colour. If U want to be more decorative at a bit of parsely
and some floral cut radishes. I once saw them
in a bag in a store already cut into florals. Of course U pay extra for that convenience. To my mind any meal that takes 30 minutes or less isn't a good meal. A good meal takes at least 45 minutes usually an hour or more to do. Ask them at White Spot.. I bet they'll say the same thing!

Mexican Vegetarian Casserole:
1 (15 1/4-ounce) can whole kernel corn, drained
1 (15-ounce) can black beans, rinsed and drained
1 (10-ounce) can whole tomatoes and green chiles
1 (8-ounce) container sour cream
1 (8-ounce) jar picante sauce
2 cups (8 ounces) shredded Cheddar cheese
2 cups cooked rice
1/4 teaspoon pepper
1 bunch green onions, chopped
1 (2 1/4-ounce) can sliced ripe olives
1 (8-ounce) package Monterey Jack cheese, shredded
Combine first 8 ingredients, and spoon into a lightly greased 13- x 9-inch baking dish. Sprinkle with remaining ingredients.
Bake at 350° for 50 minutes.
Yield: 6 servings
