Why do you have to put tofu in a tub of water?
after opening the package? and change the water every 2nd day?
Answers:
To keep it from drying out. Changing the water is just to keep it fresher.
JP is very correct.
Not all tofu is packed in water. There are two main types of tofu: silken and regular. Both are made from the same ingredients, but they are processed slightly different.
Silken tofu, or soft tofu, has a softer consistency than regular tofu. It is often packed in shelf-stable boxes, that often does not require refrigeration.
Regular tofu is the stuff you are thinking of. It is sold in the tubs of water, and require refrigeration. The water keeps the tofu fresh, retain its moisture, and helps it keep its bulk and form.
Changing the water is to keep it clean and fresh. It is best to use the tofu within a day or two of opening it. Otherwise, it is best to freeze it to keep it from going bad. Freezing it changes the consistency a bit, but it works better for mock meats this way. You can also cook it or dry it to keep it fresh.
If you do want to keep it in water in the refrigerator after opening, keep it in a sealed container, and change the water every day. This can keep it fresh for up to a week.
Hope this helps. :-)
