well of course veggies! I eat lots of them anyway... I'm talking about what substitude the nutrients in meat, so I make sure I don't miss any nutrients in my diet that i need.

Meat is not the only real source of protein.
These are, for example, vegan sources of protein:
Cereals and grains - buckwheat*, rye, corn, rice, pasta...
Leafy green vegetables, including spinach
Legumes - beans, lentils, peas, peanuts
Nuts - almonds, walnuts, cashews...
Seaweed - spirulina*, kelp ...
Seeds - hemp*, sesame, sunflower...
Soy* products - tofu, tempeh, soy milk...
Vegetables - Brussel sprouts, potatoes, yuca
Vegetables.

You answerd your own question...nuts, fruits veggies, rice, pasta...fresh and cooked. I wouldn't cook them to death because the food loses it's nutritional value.
Try Gluten or Sietan. Those are a lot more "meaty" than tofu. And eggs, especially egg whites.
Lots more greens and flax seeds (for Omega fatty acids).
there's everything for vegetarians, vegetarian sausages, vegetarian hams, etc.. just head to the supermarket and ask where it is
Red Beans and Rice and lots of other fruits and vegetables. If you include dairy then include yogurt, cheese and milk.

Why do you not want to eat meat? So you can feel like you're part of some "movement". You need counseling.
they make all sorts of veggie burgers and meat substitutes now. and they're all pretty tasty! they usually have lots of protein. you kind find them in the frozen section of your grocery store.
Fish, particulary cold water fish.

you don't need to worry about the nutrients from meat.
Just eat a variety of vegetables, fruits, cereals and nuts.
It'll be fine.
Don't go over the top with just replacing meat with fake-meat. Its not always the best way to get a healthy diet. Most people who maintain a successful veggie diet tend to cook from raw ingredients.
The odd bit of fake meat is ok, but not with every meal.
Quorn products. They're available in many different forms and provide the same amount of protein as meat produce without the added fat content. You can get Quorn mince, sausages,burgers, bacon and ham. They're available at most good supermarkets although certain products (like the ham) are harder to find.
